Homemade Gelato – Hard Ice cream or Gelato machine

Gelato makers churn the gelato slower than ice cream makers in an up and down fashion to whip less air into the mixture, explains David Lebovitz, culinary author and former pastry chef. This results in a creamier frozen desert. Gelato recipes also contain less butterfat than ice cream recipes to allow it to retain its smooth texture. When using a gelato maker, prepare the gelato recipe in a separate bowl beforehand; find recipes online, in cookbooks or in a recipe booklet often provided with your gelato maker.

  • Food-grade alcohol
  • Spoon or ice cream scoop
  • Storage container

Wipe the gelato maker’s aluminum bottom with a rag or cotton ball dipped in food-grade alcohol, such as vodka or rum, before using the appliance. This prevents ice from forming between the bowl and the bottom of the gelato maker.

Twist off the lid on the gelato maker’s bowl.

Pour all ingredients from your recipe into the gelato maker’s bowl. Do not overfill; most gelato makers hold about three to four cups of mix.

Twist the bowl’s lid back on.

Plug the gelato maker’s power cord into a grounded electrical outlet.

Check the gelato every 10 to 20 minutes. It should take about 30 to 40 minutes to reach the appropriate consistency, but you will want to check it periodically to make sure the gelato doesn’t freeze into a hard consistency. You can tell the gelato is too hard if the paddle strains or stops. Some models have an auto safety shut-off to shut down the maker if the paddle strains; with these models it will beep to alert you if this happens

Turn the gelato maker’s power switch to on to activate the paddle rotation and chilling function

Add solid pieces of food such as chocolate, nuts or fruit at the end of the cycle, about five minutes before it appears the gelato is ready.

Twist off the lid and remove the paddle and bowl after the gelato is finished. Scoop out the gelato with a spoon, ice cream scoop or a provided scoop and place it in another container for storage.
